Palm Sugar Pudding
From Tok Anjang.
You need:
Pudding
110g sugar
3/4 cup water
Pandan leaves or Rose water
4 eggs
1 can Ideal evaporated milk
Palm Sugar Syrup
2 round pieces of Gula Melaka (Palm Sugar)
1 tablespoon sugar (Optional)
1/4 cup water
How to:
1. In a small pot, place sugar and water over heat
2. Simmer over medium heat until sugar is dissolved. Cool completely
3. Start steamer
4. In a small pot melt sugar(s) with water by simmering over medium heat
5. Sift dark syrup into a mould, set it aside
5. Beat eggs. Pour in cooled syrup. Mix well. Pour in evaporated milk
6. Sift the prepared pudding mixture into the prepared mould
7. Place pudding in a steamer rack and steam for 22 minutes*
8. Cool pudding before cooling it completely in the fridge
9. Serve pudding cold out-and-upside down or in the mould.
*Note: If you prefer to use the oven, place pudding in a pan covered with water and baked in a preheated oven for about 45min-1 hour.
