Roast Turkey Salad



You need:

Roast Turkey
Salad Mix

Cucumber
Red Onions
Extra Virgin Olive Oil
Lemon
Mango Chutney

Directions:

Wash and drain salad mix. Slice cucumber to prefered shape and thickness. Cut, then squeeze lemon and mix the juice with olive oil and mango chutney. You can also use any other dressing of your choice. Toss dressing with turkey and salad. Serve.

Salmon and Brocollini and Potato

Standard dinner these days. Like to have this with hot mango chutney. I do not have measurements for meal like this. But the basic rule... salmon size of palm for one, double that for two. One medium potato for one, double that for two and three stalks of broccolinis for one, double that for two.


You need:
Salmon fillet
Broccollini, blanched or steam
Potato, skinned and sliced diagonally
Water, Salt and Pepper

How to:
Wash all ingredients. Boil water with bit of salt. Blanch or steam brocollinis for about 4-5 minutes. Drain. Boil cut potatos for about 8-10 minutes, longer if cut thicker. Scooped out and drain in a colander. Poach salmon for about 10 minutes. Drain. Serve salmon and veg.

Condiments:
Mango Chutney, Honey Mustard, English Mustard, Tartar Sauce etc. Works with any of those.
